The wines

Saperavi
Qvevri
Appelation
We Pre-selected Saperavi vineyards, in Telavi Region. In August, vineyard has been green harvested, in order to decrease the crop yields, with the aim to achieve better quality grapes.
After selective hand harvesting, grapes were packed in 10 kg boxes and delivered to a winery.
Upon Arrival, grapes underwent destemming process and were placed in Qvevri. Fermentation was conducted at a temperature ranging between 23°-26° C.Fermentation process was completed manually to minimize intervention and contact with grapeseeds, resulting in soft extraction of tannin and color. Wine aged in Qvevri for 6 months. Finally, wine was bottled and stored at optimal tempreture.

Kindzmarauli
Appelation
We pre-selected vineyard in the Kindzmarauli micro-zone and harvested grapes when they reached optimal condi- tions for making naturally semi-sweet wines.
Soft de-stemming and crushing are followed by fermenta- tion at controlled temperature in stainless steel tanks.
After 5-7 days of maceration, when usually the desired level of residual sugar is reached, fermentation is stopped by cooling, to retain the natural sweetness and freshness of the wine. Afterward, wine is kept cold at around 0°C before bottling.

Usakhelouri
Appelation
We pre-selected vineyard in village Okuresh, Lechkhumi region. Grapes were hand-harvested at the optimal condition and transferred to the cellars by 10 kg wooden boxes in refrigerated vehicles to avoid damage to berries. Soft de-stemming and crushing are followed by fermentation at controlled temperature in stainless steel tanks.
After 5-7 days of maceration, when usually the desired level of residual sugar is reached, fermentation is stopped by cooling, to retain the natural sweetness and freshness of the wine. Afterward, wine is kept cold at around 0°C before bottling.

Kisi
Appelation
We pre-selected Kisi vineyard in Tsinandali microzone. The vineyard is planted on a slope, 600 meters above sea level, on a clay soil.Vineyard has been green harvested, in order to decrease the crop yields, with the aim to achieve better quality grapes.
In September, grape was hand harvested, packed in 10 kg boxes and delivered to a winery. Upon arrival, grape was placed on a sorting table and underwent selection process, once again.
After processing grapes in stalk remover machine, without smashing up grapeseeds, liquid was stored in Qvevri. With the aid of Qvevri cooling system, fermentation process and cap management were performed at low temperature. The goal was to preserve compounds that contribute to wine aroma and flavor.

Khilkhi
Qvevri

We pre-selected Kakhetian Khikhvi vineyard in the Akhmeta region.
The vineyard is planted on a slope, 600 meters above sea level, on clay soil. We made a green harvest to decrease the crop yields and improve the flavor concentration of the remaining grape bunches.
In September, grapes were hand-harvested, carefully selected, packed in 15 kg boxes, and delivered to a winery.
Upon arrival, grapes were placed on a sorting table and underwent a selection process once again. After de-stem- ming undamaged berries were transferred in Qvervri. With the aid of the Qvevri cooling system, fermentation process, and cap management were performed at low temperature (14-15 c ) to preserve compounds that contribute to wine aroma and flavor. The wine was fermented and macerated on Chacha (pomace) for 6 months.

- Tasting Notes: pleasant taste of field flowers, with slight hint of honey sweetness,rich in tannins with soft and silky finish.

Wine

We pre-selected Kisi, Kakhuri Mtsvane and Rkatsiteli vineyards in Tsinandali microzone.
In August, each vineyard has been green harvested, in order to decrease the crop yields, with the aim to achieve better quality grapes.In September, grape was hand harvested, packed in 10 kg boxes and delivered to a winery.
Upon arrival, grape was placed on a sorting table and underwent selection process, once again. Each grape variety, selected in particular proportion, was destemmed. Fermenatation of the cepage was made partially on chacha, in Qvevri at a temperature of 13°-15° C. The goal was to preserve compounds that contribute to wine aroma and flavor.

Wine

Appelation
We pre-selected vineyards from both East and West Georgia, as we wanted to create a unique blend of 7 different grape varieties. From Kakheti region we selected Khikhvi, Kisi, Rkatsiteli, Kakhetian Mtsvane and Chardon- nay, as from Imereti Tsolikouri and Krakhuna.
Vintage was planned in early October, as we needed to coincide the optimal harvest stages for all varieties. We started vintage in the Imereti region early morning, before- hand it had been delivered to the destination place (Kakheti), evening vintage was performed in the Kakheti region. Grapes were hand-harvested, carefully selected delivered to a winery in 15 kg boxes.
After de-streaming grapes were cooled down and moved to the closed pneumatic press. After 5 hours maceration grapes were pressed. The free-run juice was clarified and moved in the tank for fermentation. After fermentation wine was moved to another tank for further maturation.
